Amaranth (Amaranthus) is a versatile, non-hybrid, open-pollinated, and non-GMO plant, making it an excellent choice for year-round sowing, except during the colder months (Dec-Feb). This tropical and sub-tropical crop thrives in warm temperatures, featuring big-medium-sized red leaves with a burgundy red overlay and long-lasting straight stems. It’s ready for harvest 40-50 days after planting, perfect for picking individual leaves or chaffing seeds as needed. Known for its rich nutritional profile, amaranth is a gluten-free superfood packed with essential amino acids, including lysine, making it a fantastic addition to any gluten-free diet. Resembling spinach with a slightly artichoke-like flavor, it’s grown as a leafy vegetable, cereal, or ornamental plant. To plant, space seeds or seedlings 10-12” apart in full sunlight, ensuring warm soil temperatures for best germination. Amaranth can be grown in flower gardens or as companion plants with lettuce and radishes.
